Cast Iron Roasted Chicken

One of my favorite and easiest week night dinners! This 45 minute - 1 hour dinner is so simple to make you can even pop it in the oven and leave it alone.

What you will need:

  • One fresh whole chicken, 5 - 5.5 pounds
  • A large cast iron skillet
  • 4 Tablespoons of melted butter (about a quarter to half a stick)
  • Seasons: Kosher salt, Black Pepper, Garlic Powder (You can also use all-purpose steak seasoning but I typically just do salt, pepper and garlic powder)
  • 1 lemon
  • 1 whole bulb of garlic

 

Step 1: Place the cast iron skillet in the over and preheat to 450 degrees

Step 2Remove giblets and neck from inside of chicken.

Step 3Rinse chicken well with cold water and pat dry with paper towels.

Step 4: Place whole chicken in another dish. Stuff inside of chicken with 1 lemon cut in half and 1 full bulb of garlic cut in half

 

Step 5: Pour melted butter over chicken and season both sides.

Step 6: Transfer the chicken to HOT cast iron skillet (be careful!! The cast iron is super hot) -- I recommend removing cast iron with 2 hot pads and place chicken in cast iron and then carefully place the cast iron back into the oven. 

Step 7: If there is room, add some of your favorite veggies around the chicken. (This depends on the size of your cast iron)

Step 8: Roast chicken at 450 degrees for about 45 minutes, or until temperature in thickest part of breast reads 165 degrees

Step 9: Remove chicken and let chicken rest for 15 - 20 minutes before carving and serving.
